Pear, pecan & ricotta crostini

When Annie @mostlovelythings invited me to join, the first thing that came to mind is this light, sweet and savory pear and ricotta crostini. It’s quick, easy, versatile and so darn good! It’s a @marthastewart recipe that I tweaked just a bit: I use pecans or almonds (I’m allergic to walnuts) and sometimes, omit toasting the bread (crostini) and just slice up a fresh baguette, add the cheese, pears, honey and nuts and serve as is. *The recipe featured uses fresh sliced bread, not toasted. Directions to make with toasted bread (crostini) in recipe below.
How to make pear, pecan & ricotta crostini

This appetizer is so easy to make and can be varied to make it just the way you like (switch from ricotta to goat or to vegan cheese, pears to apples, the possibilities are endless). It’s literally five ingredients and takes just minutes to assemble. I recommend using fresh bread, good-quality ricotta cheese, ripe pears, honey and whatever nuts you prefer. If you are toasting the bread first, you can even get away with using day-old bread.

Pear, Pecan & Ricotta Crostini

Spoon creamy ricotta cheese, sweet pears and honey topping on crostini or fresh baguette slices and your new favorite appetizer will disappear quickly.
Ingredients
- 1 Baguette
- 1 1/4 cups ricotta cheese
- 1 Pear, sliced
- Pecan pieces
- 1/3 cup honey for drizzling
Instructions
Crostini:
- Preheat oven to 350 degrees
- Cut baguette into 1/2 inch thick slices
- Brush baguette slices with olive oil
- Bake in a single layer until crostini are toasted and crisp, about 20 minutes, flipping halfway through
- Divide ricotta cheese among crostini
- Top each piece with pear slices
- Add chopped nuts
- Drizzle with honey

STEFANIE, I THINK IT’S SO SMART TO JUST SKIP THE TOASTING AND USE SOME GREAT FRESH BREAD. RICOTTA IS ALSO A NICE CHANGE AND I BET PAIRS WELL WITH THE PEARS.
